Soak the macadamia nuts in water for 8 – 12 hours prior to use, than drain and reserve for further use.
Pre-heat the oven to 180c.
Arrange the beetroots on a baking tray and roast off in the oven till tender.
Remove from the oven and peel.
Sauté off the onions and lemon zest till caramelized.
Add the nuts and onion mix to a food processor, my preference is a Thermomix, and blend till smooth, you may need to add some of the Nage to adjust consistency.
Add the beetroots, coriander and seasoning, then blend till a smooth paste.
Adjust consistency and seasoning prior to serving.
