Pat the chicken pieces down with paper towel and place in a large mixing bowl.
Add the spices and lemon zest, and mix together till evenly covered.
Add a splash of olive oil, some pepper and a little salt for taste.
Mix another time, then cover and allow to marinate for half an hour.
In a hot griddle pan, or BBQ, please ensure the metal is screaming hot. Lay the chicken out on the plate and allow to cook for several minutes till well caramelized.
Turn the chicken and allow to soak for a few minutes prior to finishing off in a pre-heated oven at 180c for 10 minutes.
Remove from the oven and serve with minted yoghurt, and perhaps a Fattoush salad
