Instructions
Chips
Pre-heat the oven to 210c.
In a mixing bowl combine the sweet potato, oil, and thyme.
Lay them on a baking tray lined with baking paper.
Cook in the oven for 10 – 15 minutes, then turn the chips and cook out for a further 10 minutes.
Combine the paprika and seasoning in a mixing bowl, then toss through the chips prior to serving.
Sauce
Blend together the nuts and the milk, my preference is in a Thermomix till smooth.
Add the mustard and a splash of vinegar, and continue to mix.
Add the oil at a gentle rate, with the machine running, creating an emulsion.
Season to taste
Serve the chips with a side dish of the macadamia nut mayonnaise.
