Spelt Cookies

Cookies are a much-loved favourite for many people. In this recipe, the author has combined the ingredient spelt with another world favorite ingredient, the humble, but ever loved chocolate chip. If you are new to spelt, you might not know that it is an ancient grain, and has been around for a long time. Many cultures and civilizations have relied upon this grain for survival. The only reason it dropped out of favour was the price tag. Once the wheat grain gained popularity the sheer volume produced drove down the costs. Wheat all of a sudden was much cheaper than the other grains, and there was a migration away from many of the more ancient, and in many cases healthier grains.
The author has chosen 'spelt' to showcase its flavour and more importantly its health benefits. This spelt cookie recipe combines a healthy grain with stevia, a healthier sweetening alternative, adding the naughtiness of chocolate.
Spelt Chocolate Chip Cookies
Ingredients
- 4 tbsp Butter - softened at room temperature
- ½ cup Stevia or Monkfruit Sweetener
- 1 tsp Vanilla Extract
- Pinch Salt
- 1 Egg - large
- 1 cup Spelt Flour
- ½ tsp Baking Powder
- ¼ tsp Baking Soda
- ¼ cup Sugar Free Chocolate Chips
- ¼ cup Lightly Salted Almonds - roughly chopped
Instructions
- Preheat the oven to 350 deg F.
- Prepare a cookie tray with non-stick spray or a non-stick baking mat.
- In a large mixing bowl, cream the butter and stevia/monk fruit sweetener.
- Add in the vanilla extract, salt and egg, and whisk together thoroughly.
- Add the spelt flour, baking powder and baking soda into the bowl. Mix the dry ingredients into the creamed butter mixture.
- Add in the chocolate chips and chopped almonds, and fold into the dough. You may need to use your hands to knead the chocolate and almonds evenly into the dough.
- Take a large spoon and scoop a tablespoon of the dough. Roll the dough into balls and place on the prepared cookie tray. Repeat with remaining dough.
- Flatten the balls to approximately 1 inch thickness.
- Bake in a preheated oven for 10-15 mins till lightly golden brown.
- Cool on the baking sheet for about 5 mins before eating!
