Roasted Beetroot & Macadamia Nut Dip

Dips are always a winner when you have guests around, though too often we tend to get a little tired of the usual suspects. Roasted Beetroot & Macadamia Nut Dip is a simple to make alternative, that is super cheap and takes little time to make. It is pack full of luscious beetroot flavour and has a crunch and creaminess from the macadamia nuts.

The macadamia nut is a traditional bush tucker for enjoyed by indigenous nations of Australia, for a very long time. Not sure how long, I don't really think anyone would actually be able to date it. Rest assured it is a very long time.

Here is a simple and delicious recipe in which you can experience this traditional tucker, so why not make Roasted Beetroot & Macadamia Nut Dip for the family this weekend?

Roasted Beetroot & Macadamia Nut Dip

Equipment

  • food processor
  • baking tray

Ingredients
  

  • 150 gm Macadamia nuts
  • 400 gm Whole beetroots - approximately
  • 2 Brown onions peeled & sliced fine
  • 1 Lemon - zested
  • 100 ml Nage - vegetable stock (cold)
  • 1 tsp Coriander Powder
  • Salt & Pepper

Instructions
 

  • Soak the macadamia nuts in water for 8 – 12 hours prior to use, than drain and reserve for further use.
  • Pre-heat the oven to 180c.
  • Arrange the beetroots on a baking tray and roast off in the oven till tender.
  • Remove from the oven and peel.
  • Sauté off the onions and lemon zest till caramelized.
  • Add the nuts and onion mix to a food processor, my preference is a Thermomix, and blend till smooth, you may need to add some of the Nage to adjust consistency.
  • Add the beetroots, coriander and seasoning, then blend till a smooth paste.
  • Adjust consistency and seasoning prior to serving.
