Soy Good Soda Noodles

Ingredients
  

  • 1 tbsp apple cider vinegar
  • 2 tbsp soy sauce - low salt
  • 1 tsp honey
  • 1 tsp sesame oil
  • 1 chicken breast - thinly sliced
  • Half a head of broccoli
  • 1 head of bok choy
  • 100 g dried soba noodles
  • Sesame seeds to garnish

Instructions
 

  • Marinate chicken in vinegar, soy sauce and honey (at least 15 mins, preferably overnight).
    Cook noodles in boiling water as per the instructions on the packet and immediately blanch in cold water.
    Toast the sesame seeds in a dry pan and set them aside for later.
  • Steam the bok choy and broccoli.
    Meanwhile, pan fry the chicken and its marinade in sesame oil.
    Turn the heat off and add the bok choy, broccoli, and noodles, and stir to coat with the sauce.
    Put in your serving bowl and top with the toasted sesame seeds before serving.
