Asparagus & Prosciutto Fritti

This combination of asparagus and cured pork is delicious, then add to that the bite of acid from fresh lemon, and you are elevated to another gastronomic level. Asparagus & Prosciutto Fritti can be a starter or just a snack with a crisp white wine on a balmy summer evening.

This recipe, for me, screams the Mediterranean, those lazy summer afternoons filled with friends, laughter and memorable food. That is simple to prepare and packs a flavour punch that helps to create lifelong memories.

Asparagus & Prosciutto Fritti

Equipment

  • Saucepan

Ingredients
  

  • 10 Asparagus Spears - trimmed
  • 10 Prosciutto or Jamon - slices
  • 150 gm Potato Starch
  • 3 Lemons - wedged

Instructions
 

  • Wrap each spear with a slice of prosciutto, and set aside.
  • In a mixing bowl add the starch, and enough water to make a batter consistency.
  • Dip each spear into the batter then into a pan of hot olive oil, and shallow fry till golden brown, evenly.
  • Remove from the oil and allow to drain on some absorbent kitchen paper.
  • Serve together with a slice of lemon.
