Vegan Mashed Potatoes

Many of us have intolerances or allergies to particular foods or types of food, from lactose to gluten, or nut to fructose. The can be severe, and often require us to have on hand an EpiPen, just in case, a reaction occurs. So it is imperative that those who fall into this category particularly watch what they eat.

Then there are some of us who have food preferences, who choose to eat what we want to eat. From those who would like to reduce their carbon footprint, to people who are conscious of animal welfare.

Here is a recipe that helps to tick many of those boxes, utilising the kick-butt taste of the humble sweet potato. This is a recipe that to some would only be classed as a side dish to the main meal. Though it is so much more as it can be a meal in its own right.

Not to mention the derivative recipes one can prepare from this recipe as a base, perhaps say with the leftovers. Such as fried sweet potato the next morning, or sweet potato dumplings. The possibilities are endless, only limited by your imagination or the search time you put in through google.

Vegan Mashed Potatoes

Equipment

  • Pot large

Ingredients
  

  • 1.8 kg sweet potatoes
  • 120 ml almond milk
  • 24 gm vegan butter
  • 2 cloves garlic
  • salt

Instructions
 

  • Peel the sweet potatoes and cut them into approximately 1-inch pieces.
  • Place the potato chunks in a large pot and fill the pot with enough water to cover the potatoes. Cook over medium-high heat and bring to a boil. Once it has reached a boil, lower the heat and let the potatoes continue to cook for about 15 more minutes, until you can easily cut them with a fork.
  • Once the sweet potatoes have finished cooking, drain them and set aside.
  • Combine the vegan butter and minced garlic in the pot and cook for about 2 minutes over medium heat until the garlic becomes fragrant.
  • Return the sweet potatoes to the pot along with the remaining ingredients.
  • Mash the sweet potatoes and then stir everything together until you have your creamy mashed sweet potatoes. Let them cool slightly before enjoying.
